BAKED, CRISPY ZUCCHINI FRIES

This recipe was born when I had some zucchini that needed using up, so to get my husband to eat it, I needed to get creative. He's not a fan of vegetables, but he loves fries, so this was my way of combining the two.


Corn starch is the secret ingredient here! Instead of using flour in recipes like these, try cornstarch for that extra crispy texture!


What you’ll need:

-2 medium zucchini, cut into thick strips

-1 tsp of salt, divided

-3 tbsp of cornstarch

-½ tsp onion powder

-½ tsp of chili powder

-1 tsp of garlic powder, divided

-2 eggs

-1 ½ cups of panko

-¼ cup of grated parmesan

-½ tsp of freshly cracked black pepper


Method:

*Preheat oven to 425 F*

1. Slice zucchini into thick strips.

2. Mix the cornstarch, ½ tsp salt, chili powder, ½ tsp garlic powder and onion powder in a bowl.

3. In a separate bowl, whisk the eggs.

4. In a third bowl, combine the panko, ½ tsp salt, ½ garlic powder, black pepper, and parmesan.

5. Coat the zucchini in the cornstarch mixture, then dip into the eggs, and finally dip into the panko mixture.

6. Place zucchini on a parchment lined baking tray. Leave a little space between each piece.

7. Spray the tops of the zucchini fries with some cooking oil.

8. Bake for 20 minutes, then flip and bake for an additional 5-7 minutes, or until golden brown and crispy.


Serve immediately, with some spicy ketchup or spicy mayo on the side!
