DESSERT INSPIRED CHIA SEED PUDDING- 3 WAYS

Chia seed pudding has become one of my favourite breakfasts! It's great for anyone, like me, who doesn't have much time in the morning and prefers quick, easy, and healthy breakfasts.


These chia seed puddings can be made the night before, making it the perfect grab and go breakfast! These versions also taste like dessert and are quite nutritious, so it's definitely a win-win-win recipe! These puddings are gluten-free, full of fibre, healthy fats and protein. They can also be made vegan, by substituting the milk with your favourite non-dairy milk.


The flavours: Mango & Coconut, Strawberry Shortcake, and Chocolate!




Mango-Coconut Chia Pudding


Since mangoes are in season, this chia pudding is the ultimate summer breakfast!


Ingredients (for 1 serving):

-2 tbsps chia seeds

-1/2 cup light coconut milk (if you're using full-fat coconut milk, do 1/4 cup milk, 1/4 cup coconut milk)

-1 tsp vanilla

-1 tsp maple syrup

-1/4 cup of chopped mango


Method:

  1. Mix all of the above ingredients, except for the mangoes, in a jar and refrigerate overnight.

  2. In the morning you will wake up to a sweet and creamy pudding- top the chia pudding with the chopped mango.

  3. Stir and enjoy! This is best enjoyed chilled.




Strawberry Shortcake Chia Pudding

This one is packed full of fibre, healthy fats, and protein, but truly tastes like dessert- you wouldn't even know you're eating something healthy!

Ingredients (for 1 serving):

-2 tbsps chia seeds

-1/2 cup milk

-1 tsp vanilla

-2 tsp maple syrup

-2 tbsps of plain greek yogurt

-1/4 cup of chopped strawberries (divided)


Method:

  1. Mix all of the above ingredients in a jar. Reserve some of the strawberries. Refrigerate the mixture overnight.

  2. In the morning you will wake up to a sweet and creamy pudding- top the chia pudding with the reserved strawberries.

  3. Stir and enjoy! This is best enjoyed chilled.


Chocolate Chia Pudding

Ingredients (for 1 serving):

-2 tbsps chia seeds

-1/2 cup milk

-1 tsp vanilla

-1 tsp maple syrup (add more if you like it sweeter)

-1 tbsp of cacao powder

-Toppings: coconut yogurt, raspberries or strawberries


Method:

  1. Mix all of the above, except for the toppings, in a jar. Refrigerate the mixture overnight.

  2. In the morning you will wake up to a chocolatey pudding- top the chia pudding with the your choice of toppings. I love fresh berries on top! If you want to get super fancy, you can add coconut yogurt/cream, and dark chocolate shavings!

  3. Stir and enjoy! This is best enjoyed chilled.
